Ingredients
1 cup bulgur
2 cups water
3 Tbsp. lemon juice
1½ Tbsp. olive oil
2 cups parsley, stemmed, finely chopped
4 cups ripe tomatoes, finely diced
½ cup green onions, finely minced
1 tsp. mint, finely chopped or ¼ cup salsa
Salt and pepper, to taste
Romaine leaves, as needed
Directions
Cook bulgur with water for 15 minutes or soak in water overnight. Two hours prior to serving, mix all ingredients except romaine leaves; refrigerate. Serve on romaine leaves.
