Cinnamon-Orange French Toast

Ingredients
3 large eggs
¾ cup skim milk
1 tablespoon granulated sugar
¼ teaspoon ground cinnamon
¼ teaspoon grated orange peel
Pinch of salt
1 tablespoon butter
8 slices sandwich bread
1 tablespoon confectioners’ sugar
1 cup “lite” syrup (about 1 tablespoon per slice)
Directions
In a shallow bowl or pie plate, beat together the eggs, milk, sugar, cinnamon, orange peel and salt until blended. Using a cookie cutter, cut out shapes from the bread slices.
In a large, nonstick skillet, melt the butter over medium heat. Dip the bread slices in the egg mixture, turning to coat both sides well. Place the bread slices in the skillet, arranging as many as will fit easily in a single layer in the skillet. Cook for 2 to 4 minutes on both sides of the bread until golden brown, using a spatula to turn the bread. Repeat until all the bread is used. Lightly drizzle with “lite” syrup just before serving.
