Cauliflower Omlette

Ingredients
2 eggs
1 tsp. olive oil
1 cup par-boiled cauliflower, chopped
1 clove chopped garlic
parsley
salt and pepper to taste

Directions
Scramble the eggs and add to heated pan with olive oil. Let egg settle a bit then add chopped cauliflower. Add remaining ingredients. Fold omlette in half. Serve and enjoy!
